Vegetable Fried Rice

Ingredients

· Brown rice

· 1/4 white cabbage

· 1 broccoli

· 1/2 bunch of kale

· 1 carrot

· 1 red onion

· unhulled tahini

· coconut aminos

· tamari

Method:

1.     Cook brown rice as per packet instructions.

2.     Dice 1 red onion.

3.     Chop cabbage, carrot, broccoli and kale.

4.     On a wok or large pan coat pan with extra virgin olive oil.

5.     Sauté the red onion until lightly browned.

6.     Add vegetables and 3 tablespoons of coconut aminos, cook until soft, approximately 10 minutes on medium heat.

7.     Once rice is cooked rinse and stain rice.

8.     Add rice to wok or pan and cook for a further 5-7 minutes.

9.     Serve with tahini, coconut aminos and tamari.
