Salmon Soba Noodle Bowl

This is a quick and easy dinner to satisfy! This soba noodle salmon bowl is packed with omega-3’s to support healthy skin and hormones and cooked spinach and green peas are a good source of planted based iron.

INGREDIENTS:

  • 1 piece of wild caught salmon

  • 1/2 cup green peas (thawed)

  • 1/2 cup edamame beans (thawed)

  • 1 packet of spinach

  • 1 clove garlic (optional)

  • extra virgin olive oil

  • lemon

  • 1 packet soba noodles

FOR THE SAUCE:

  • 1 tablespoon almond butter

  • 1 tablespoon tamari

  • 1 tablespoon sesame oil

  • 2 tablespoons coconut aminos

METHOD:

  1. Pre-heat the oven to 180 degrees C

  2. Marinate salmon with olive oil, lemon juice and sea salt and bake for 20 minutes

  3. Bring water to a boil and add 1 serve of soba noodles (cooked as per packet instructions), once cooked drain and rinse the noodles.

  4. Heat extra virgin olive oil on pan on medium-high heat and sauté the garlic, peas, edamame, and spinach. Once the spinach has wilted add the noodles and mix.

  5. Serve the noodle and vegetable mix into a bowl, top with salmon and sauce!

  6. Enjoy!
