Veggie Packed Relish!

Need an easy way to add veggies into your meals throughout the week? Why not a relish - so delicious and nutritious.

I love add this to top avocado on toast, having it with eggs or mixing it in my salads. It is an easy and delicious way to get veggies in and a little booster if you don’t have time to be chopping vegetables all week long.

Its also a great source of prebiotics to improve gut health!

This recipe made 2 glass jars full.

1 large fennel, diced.

1 brown onion, diced.

2 medium sized beetroots, peeled and grated.

1 pink lady apple, grated.

¼ cup honey

1 tablespoon apple cider vinegar

1 pinch of salt 

 

Combine fennel, onion, beetroot, apple and a pinch of salt in a pot on the stove and cook on high for 10 minutes mixing occasionally to stop sticking.

Once soft add 1 tablespoon of apple cider vinegar and ¼ cup honey.

Cook on high for a further 2-3 minutes.

Add 1 cup of warm water and simmer on low-medium for 1 hour.

Store in the fridge in glass jars.
